Chef Knife vs Utility Knife: My Top Pick as a Passionate Cook

April 27, 2026

A while back I was preparing a meal in our fire station and asked one of my colleagues to hand me over a utility knife, he handed me a chef knife. I just smiled and pointed the right knife to him. I can’t blame him because most people who don’t cook only know one knife i.e a chef. He curiously asked me is there any differences between these knives? I said YES and explained it to him.

Just like my colleague, there are many people who don’t know their difference between a chef and utility knife. I thought why not write on this topic who are in a bit of confusion and here I’m. Continue reading and you’ll get the answer.

What is a Chef Knife?

chef knife

It is a long, triangular, broad and curved knife measuring between 6 to 14 inches. It is the workhouse of any kitchen designed to handle various tasks such as cutting, slicing, dicing and mining.

In most western kitchens, it is considered as a standard knife for all kinds of tasks and that’s the reason when I asked my friend for a utility knife, he handed me a chef knife. That’s how popular this knife is.

The major differences between this knife and the utility knife is, it is non-serrated and long whereas the latter could be serrated in some cases.

Whether it is my home kitchen or fire station kitchen, I do most work with a chef knife because it is a versatile blade that lets me do anything I want. HENCKELS Classic is one of my favorite knives that I regularly use for various tasks. It is an affordable knife that features an 8-inch full tang blade stainless steel and weighs about 0.28 lbs which makes the knife extremely lightweight and portable.

How do I use my chef knives?

1. Preparing a large batch of veggies

When I cut, dice and mince a large set of vegetables to prepare a meal for our team at work, it is my go-to choice. The wide blade lets me do these tasks smoothly and it is very difficult for me to do the same task with other knives due to narrow blades.

2. Processing large meat

If I’m planning to cook a large meat such as whole brisket, turkey, standing rib roast, whole chicken etc, I use this knife for trimming and slicing them.

3. Rocking motion

When there are any fruits or produce that requires rocking motion with a cutting board, it is my preferred knife for the task.

4. Quick meal preparation

When I’m in a hurry to prepare a meal quickly, I opt for a chef knife as the long blade lets me cut and slice foods effortlessly at a fast pace.

When do I skip this knife?

  1. For quick every day tasks.
  2. Small produce like onion, tomato, herbs etc.
  3. Peeling fruits.
  4. When I feel the knife is too heavy for cutting or slicing any item.

What is a utility knife?

what is a utility knife

It is a compact kitchen knife with the size ranging from 4-9 inches. It could be either serrated or non-serrated blade, built for precise cutting and slicing. It is smaller than a chef knife and larger than a paring knife. It is also known as “prep knife” and “petty knife”.

The overall profile of the knife is narrower which makes it a good choice for ingredients that stick to the blade. Tojiro petty knife is one of my favorite options that I regularly use. It has a 4.7-inch full tang blade made out of stainless steel that weighs about 90 grams and I find it easy to use for any task.

How do I use this blade:

1. Slicing and dicing fruits & vegetables

With this compact knife, I can easily slice and dice Apple, Pears, Citrus, Bell peppers, Bananas, Grapefruits etc. It is perfect for detailed cutting of these foods.

2. Trimming meats

While processing with a thick chicken meat or fish, I use this blade to trim into smaller pieces. The blade is wide enough to perform this task.

3. Peeling & segmenting

When I plan to eat a whole fruit, this blade helps me remove the skin effortlessly with this narrow and thin profile.

4. Chopping herbs
